
Mom’s Sweet Potato Soufflé
3-4 cups cooked, mashed sweet potatoes ( I use canned)
1/4 cup of sugar
2 eggs, beaten
1 tsp. Vanilla
1/2 stick butter(soft)
Pinch of salt
1tsp vanilla or 1/3 c. of bourbon
1/3 cup of cream
Mash sweet potatoes. Mix in remainder of ingredients. Pour in 9x13 pan.
In a bowl, mix:
1 cup broken pecans
1 cup brown sugar
1 stick butter(don’t melt)
½ cup flour
I usually cut above flour and butter with pastry cutter then add pecans and sugar. It will be crumbly. Crumble on top of sweet potatoes and bake for 30 minutes at 350 degrees.
I traditionally double the recipe for a large crowd.
